Pancake Mix



After living up in Lehi, we've become quite hooked on the Lehi Roller Mills pancake mix. It's healthier than most mixes, it was local, and you only add water. What's not to love? Well, living down here that lovely mix comes at quite a premium, so I had to figure something else out. Have you seen the way my boys go through pancakes? After a few minutes of fiddling in the kitchen I came up with this mix that everyone loves. Bonus: it uses lots of food storage items, so yay for that too. I mix 6x the recipe, dump it all in a container, shake it well, and done. Pancakes for a month, or week ;). Just add water till it's a consistency you like (usually about a 1:1 ratio).

This is the single recipe:

1 cup whole wheat flour (or divide it with white to your liking)
1 T sugar
2 t baking powder
1/4 t salt
2 T milled flax seed (really only need 1, I usually add extra)
1/3 c powdered milk

You can buy it in just about any store these days.(hmm, maybe not in Clark's though ;)) It can be an egg replacement. But it's a seed that is ground and is super good for you-has protein, fiber and omega-3's. So I always add extra to items I bake and smoothies, even mac n cheese. Do you still go to Costco? They have the best deal there.
