
Mmmmm...I just love the fresh strawberries that signal the start of summer. I received this recipe, I think, from my super-fab, healthy, amazing SIL Heidi quite some time ago and finally gave it a try. Wow it's fantastic! I love that it doesn't have extra sugar in it and that I can make it in 15 minutes. You get that fresh strawberry taste without being so super sweet, but it still tastes like you're eating really bad. I didn't have enough grape nuts on hand so I improvised and used a graham cracker crust. Not so healthy, but so yummy. My advice: this is best eaten fresh. Invite some friends over to enjoy it with you. It's really mushy and not so fresh later.
Grape Nut Pie Crust
1 6 oz can apple juice concentrate
1 1/2 cups grape nuts cereal
Mix together and let stand a few minutes until moisture is absorbed. Press into a 9" nonstick pie pan.
Bake at 350 for 12 minutes. Cool. Fill with fruit and yogurt.
Fresh Strawberry Pie
1 Grape-nuts pie crust
5 c. fresh strawberries (I used more)
1/2 c. fruit juice concentrate (I used apple)
2 T. corn starch
1/4 c. cold water
Mash 2 cups fresh strawberries. Add fruit juice concentrate.
Whisk cornstarch into cold water and pour into mashed fruit. Heat to boiling, stirring constantly. Mixture will become a thick, shiny glaze.
Fill pie crust with remaining whole strawberries. Pour glaze over the top. Chill and serve.

It's been a long time since I made that pie. Thanks for the reminder. I'll have to go pick some more fresh strawberries and make it.
